New Year, New Ambassador! - DEEP-END

Hello! I’m Sophie from @thatveganswimmer, one of Deep End’s ambassadors! 

I’m from North Carolina (quite a ways from the sunny west coast where Deep End originated) and I’ve been a competitive swimmer for nearly 10 years now. Additionally, just for some fun facts, I am half Ecuadorian and half a mix of English, Italian, Ukrainian and a pinch of Irish. I also really love the concept of minimalism and adore having plants as decoration! I am also vegan, gluten-free, and oil-free -- 5 and a half years strong!

I began my Instagram platform about 4 years ago and since then I have exponentially developed a passion for photography (mainly food), videography, and social media marketing. 

I really wanted to start making healthy recipes because I realized that the kind of food and meals I was making for myself, I could never find any real recipes on the internet that matched my diet. “Why not make some of my own then?”, I thought. All my recipes now are gluten-free, oil-free, refined-sugar-free, and, of course, vegan! 

Over my last five years of being vegan AND having a swimmer’s appetite, food and I have had plenty of time to find what works best for us. If you’re like me (an eternally ravishing athlete who’s keen on eating plants and being a healthy queen), then you will absolutely LOVE this recipe for a pre-practice/workout smoothie. I can’t eat much, or sometimes any, food before I exercise but I don’t like to be on a complete empty stomach or else I get very tired and nauseous.

So, to solve the problem, I like to make something light, like a smoothie or smoothie bowl. This one is for a blueberry vanilla smoothie bowl!

 

Deep End Smoothie Bowl

 

Blueberry Vanilla Smoothie Bowl

Ingredients:

  • 2 frozen bananas
  • ½ cup frozen wild blueberries
  • ¼ cup vanilla plant-based milk
  • (optional) ⅛ tsp vanilla bean powder
  • (optional) 2 pitted Medjool dates

Directions:

  1. Add all ingredients to a high-speed blender and blend until thick and smooth.
  2. Use a spatula to scoop your smoothie into a bowl and top it with your favorite fruits and nut butters.
  3. Enjoy!
